What is Rijstaffel or “Rice Table”?
Rijsttafel, a Dutch, word that literally translates to "rice table", is an elaborate meal consisting of many side dishes served in small portions, accompanied by rice prepared in several different ways. It was created around the turn of the century for Dutch colonials unsure of the native Indo cuisine. What began as a means of sampling local dishes turned into an extravagant meal for affluent Dutch settlers.
